C'EST DU NANAN uses several types of rice flour from Ogi Flour Mill depending on the product. In particular, their "Premium Rice Flour" is a high-quality rice flour made by combining the traditional milling techniques passed down in Satsumasendai with modern, precise blending techniques .
However, no matter how excellent the ingredients are, it is up to the skill of the pastry chef to fully utilize their properties.
Nanan's artisans maximize the properties of rice flour to create a variety of textures .

The source of sweetness.
"Even though it's a sweet, we want to avoid using too much sugar," and with that in mind, we've paid particular attention to the sweetness. We choose something close to raw sugar, and while we use only a small amount, we've also put in a lot of effort to ensure that the sweetness doesn't feel lacking.
We select organically certified products such as organic agave syrup, muscovado sugar, and Okinawan cane sugar, products that contain natural minerals, retain a rich flavor, and are made using traditional Japanese methods.
We use carefully selected, safe and reliable sugar, and by bringing out the aroma and various textures of the ingredients themselves, we hope you will enjoy sweets that do not rely on sweetness.
Free-range eggs
The emphasis was on kindness and peace of mind.
Eggs are the key to the flavor of our sweets, and we place great importance on the concept of "animal welfare."
Nanan only uses eggs from free-range chickens. They use two varieties: "Kaguyahime" and "Ecocco." Eggs from chickens that are raised freely without being confined to cages add richness and depth to their sweets.
The "Ecco" egg whites used in the duckworth are soft and have a clean taste. "Kaguyahime" has a sweet and savory flavor, adding richness and depth to C'EST DU NANAN's sweets.

Specially made premium bean paste
Made with organic Hokkaido-grown adzuki beans, carefully cooked to preserve the aroma and texture of the high-quality beans.
The special bean paste, made with organic agave syrup and organic cane sugar, has a subdued sweetness and a pleasant red bean aroma. Because the sugar content is kept as low as possible, the shelf life of the "Rice Dorayaki" is short.
This is a special item that was also dedicated to Usa Shrine, the head shrine of the Hachiman Shrines.

The legendary soybean flour
The soybeans used as raw materials are completely pesticide-free organic soybeans from "Mukashi Yasai no Mura," which are grown without the use of pesticides, herbicides, or even fertilizers.
Roasted soybean flour is slowly roasted by hand, bringing out the natural sweetness and aroma of the soybeans, allowing you to enjoy a deep flavor.
"Duckworth Deep-fried Kinako" is a popular item with a crispy outside and a soft, moist inside, sandwiched between kinako butter cream. You can enjoy the sweet and fragrant flavor of kinako.
Whole edible organic ginger
It is a superfood that is even used in traditional Chinese medicine.
The skin, which is usually discarded, contains most of the nutrients.
At Nanan, we use chopped ginger that is grown without any pesticides or chemical fertilizers, with the skin still on.
Ohana Honpo's fresh ginger from Oita Prefecture is grown in the naturally rich soil of Nozu Town, Usuki City, in the southeastern part of Oita Prefecture. We start by creating vibrant soil using fully ripened compost, and have obtained organic JAS certification and Good Agricultural Practice (GAP) certification, with consistent management from harvesting onwards.
"Gome Quatre Quarts Organic Ginger" is a mellow and healthy Quatre Quarts that is packed with the delicious aroma of ginger.
Organic, pesticide-free, fair trade dried fruits
Organic, fair trade and top quality dried fruits.
All the dried fruits used at Nanan are organic. In particular, we select products that are kind to both people and the environment, such as those certified by the "Happy Project," which protects the natural environment and creates an environment where farmers can take pride in their work, thereby ensuring that consumers can receive safe and secure food. We use organic raisins from ISIK Tarim and organic figs from NOVA.
◆What is the "Happy Village Project"?
We provide ongoing training and consultation to farmers on cultivation and harvesting techniques that will improve the quality of their crops.
Additionally, to improve the socio-economic situation in the village, we provide support to school children, improve buildings for workers, and provide water tanks in times of local water crisis.
By protecting the natural environment and creating an environment where farmers can take pride in their work, consumers will be able to obtain safe and secure food, which will lead to an improvement in people's lives.
We continue to carry out thorough quality control even after importing, and our products have also obtained Japanese organic JAS certification.
Yuzu with the noteworthy nutrient "black spots"
The black spots on the yuzu used at Nanan Tokyo are an antibacterial substance called "salvestrol," a healthy compound produced by the yuzu itself.
It is commonly found in pesticide-free produce and is found in the skins, seeds, rinds, roots, etc. Organic vegetables and fruits contain 3 to 30 times more of it than pesticide-treated produce.
Its relationship with cancer has been elucidated at the molecular level, and it is attracting a lot of attention as a dietary nutrient with natural anti-cancer properties.
◆What is Terraced Yuzu?
"Tanada Yuzu" is a local specialty produced in Buzen City, Fukuoka Prefecture. It is characterized by its large size and rich fragrance.
Our shop uses the rarest of these, fully ripe yuzu grown without pesticides.
In November, we head deep into the mountains of Buzen City to pick yuzu. At an altitude of 400 meters, we pick pesticide-free "Terraced Yuzu" grown in the great outdoors with extreme temperature differences, and then turn them into jam, yuzu peel, and more at Nanan's workshop.

The finest Bulgarian damask rose
Damask rose is the world's most fragrant rose and the only one approved for consumption. This product uses petals and jam from 100% Bulgarian damask roses, which are grown without agricultural practices.
The finest Bulgarian Damask roses are cultivated and harvested in the world-famous Rose Valley in central Bulgaria.
They are extremely rare and delicate, blooming for only about 20 days a year, and the fragrance escapes once the flowers open. They are all hand-picked while still in bud, still storing their fragrance.

Richly fragrant and sweet organic matcha
Kitsuki City, located in the northeastern part of Oita Prefecture, is a famous tea-producing region that is just as popular as any other tea-producing region in the country.
Grown in a warm climate and with the temperature differences in the mountains, Kitsuki tea has a unique sweetness, richness, and deep, rich aroma.
The Kitsuki Tea Producers Association, which handles everything from tea leaf production to processing, packaging, and shipping, has joined forces with Kitsuki City to develop tencha, the raw material for organic matcha, in response to the popularity of "MATCHA" not only in Japan but also overseas. Kitsuki Organic Matcha, which is ground into a fine powder using a stone mill, is appealing for its refreshing color and aroma.

The world's most sustainable chocolate
We use Felchlin couverture chocolate.
Founded in Switzerland in 1908, Felchlin is a long-established chocolate manufacturer that has placed importance on sustainability and fair trade since its founding. They carefully select high-quality ingredients, such as cocoa beans, milk, and milk powder, and make their chocolates using traditional methods.
Because it is made within close supervision, production is limited, but the high quality of the chocolate makes it a supreme chocolate that has captivated chocolatiers around the world.
What is lecithin?
Ingredients for our chocolate confectioneries are listed on the label. "Lecithin" appears as an "additive."
This is a soy-derived ingredient found in Felchlin chocolate, and is used to maintain the smoothness of the chocolate.

In fact, lecithin is an essential nutrient for brain development during growth, activating brain cells, and maintaining good health.
It is also available as a health food supplement, but when added to chocolate it must be labeled as an "additive."
