Top quality domestic rice flour
At C'EST DU NANAN, we use different types of rice flour from Ogi Flour Mill depending on the product. In particular, our "Premium Rice Flour" is a high-quality rice flour made using the specialized milling techniques handed down in Satsumasendai.
Nanan's pastry chefs, who are well versed in the characteristics of rice flour, use several different types of rice flour to create a variety of textures.
For example, the "Rice Duckworth" is crispy and fluffy, the "Rice Dorayaki" is moist and chewy, and the "Rice Sable" melts in your mouth. You can enjoy the different textures of each.
The source of sweetness.
"Even though it's a sweet, we want to avoid using too much sugar." With that in mind, we also paid particular attention to the sweetness. We choose something close to raw sugar, and while we use only a small amount, we put a lot of thought into making sure the sweetness doesn't feel lacking.
We select organically certified ingredients such as organic agave syrup, mascovado sugar, and Okinawan cane sugar, which contain natural minerals and retain a rich flavor and are made using traditional Japanese methods.
We use only safe, carefully selected sugar, and by bringing out the natural aroma and various textures of the ingredients, we hope you will enjoy sweets that do not rely on sweetness.
Free-range eggs <br data-mce-fragment="1">We place emphasis on kindness and peace of mind.
Eggs are the key to the flavor of our sweets, so we place great importance on the concept of "animal welfare."
Nanan only uses eggs from free-range chickens. They use two types: "Kaguyahime" and "Ecco." Eggs from chickens that are raised free and not confined to cages add richness and depth to their sweets.
The egg whites of "Ecco" used in Duckworth are soft and have a clean taste. "Kaguyahime" has a sweet and savory taste, which adds richness and depth to the sweets of C'EST DU NANAN.
Specially made premium bean paste <br data-mce-fragment="1">Made with organic Hokkaido red beans. Carefully cooked to preserve the aroma and graininess of the high-quality red beans.
The special bean paste, made with organic agave syrup and organic cane sugar, has a light, sweet aroma of red beans. Because the sugar content is kept as low as possible, the shelf life of the "Rice Dorayaki" is short.
This is a special item that was also dedicated to Usa Shrine, the head shrine of the Hachiman Shrines.
The legendary soybean flour <br data-mce-fragment="1">The soybeans used as the raw material are completely pesticide-free organic soybeans from "Mukashi Yasai no Mura" that are grown without the use of pesticides, herbicides, or even fertilizers.
Roasted soybean flour is slowly roasted by hand, bringing out the natural sweetness and aroma of the soybeans, allowing you to enjoy a deep flavor.

At Nanan, we use chopped ginger that is grown without any pesticides or chemical fertilizers, with the skin still on.
Ohana Honpo's fresh ginger from Oita Prefecture is grown in the naturally rich soil of Nozu Town, Usuki City, in the southeastern part of Oita Prefecture. We start by creating vibrant soil using fully ripened compost, and have obtained organic JAS certification and GAP (Good Agricultural Practices) certification, and we manage everything from harvesting to harvesting.
"Gomai Quatre-quarts Organic Ginger" is a mellow and healthy quatre-quarts that is packed with the delicious aroma of ginger.

"Tanada Yuzu" is a local specialty produced in Buzen City, Fukuoka Prefecture. It is characterized by its large size and rich fragrance.
Our store uses the rarest of these, fully ripe yuzu grown without pesticides.
In November, we head to the mountains of Buzen City to pick yuzu. At an altitude of 400 meters, we pick pesticide-free "terraced yuzu" that grow in the great outdoors with extreme temperature differences, and then we make jam and yuzu peel at Nanan's workshop.
The finest Bulgarian Damask rose <br data-mce-fragment="1">Damask rose is the most fragrant rose in the world and the only rose approved for consumption. We use petals and jam from 100% Bulgarian Damask roses, which are grown without agricultural use.
