- Commitment to roasting -⠀
All of our specialty coffee is pesticide-free and fair trade.
We mainly deal with "micro lot" beans, which are produced in very small quantities and are of high quality. Even within the same country or region, the farms, harvest times,
The flavor varies depending on the refining method, and you can experience the distinctive flavor that is unique to micro-lots.
We also take great care in roasting, roasting our own coffee in-house using a far-infrared ceramic roaster made in Japan.
What sets this method of roasting apart from other roasts is the heating method used. Hot air roasting allows the aroma to escape easily, and direct heat inevitably results in uneven roasting.
The solution to this problem is far-infrared heating. It is similar to the warmth of the sun. By vibrating the coffee beans at a molecular level, it is possible to heat them slowly to the core without destroying the fibers.
However, in order to ensure that the far infrared rays are applied evenly, it is only possible to roast in small batches.
In order to maximize the effects of far infrared rays, we roast no more than 350g at a time.
Under strict temperature control, the surface temperature of the beans is raised by far infrared rays in the first few minutes,
After that, it is heated thoroughly to ensure even cooking.
This produces a clean-tasting coffee that has all the aroma locked in, without any burnt spots or uneven roasting. The coffee is roasted with far-infrared rays, which ensures that the aroma is not lost and is heated evenly to the core, before being bagged fresh.
